We’ve cracked the code on the ultimate dairy-free dessert with this Lamington Chia Pudding by Kaela (@healthykale_). Think layers of creamy COYO Vanilla Bean yoghurt, a juicy homemade berry jam, and that all-important chocolate crack on top. It’s indulgent, nourishing, and tastes just like your favourite Aussie treat — with a gut-loving twist.
Perfect for breakfast, dessert or a mid-afternoon pick-me-up (spoiler: you’ll want to crack into it straight from the fridge).

Ingredients

Vanilla layer:

3tbsp chia seeds

3tbsp Vanilla Bean COYO

1 tbsp vanilla protein powder

Splash maple syrup

desiccated coconut

Jam layer:

3 large strawberries,

diced handful raspberries, diced

1tbsp maple syrup

1tbsp orange juice

Chocolate layer:

40g vegan chocolate

melted Sprinkle of desiccated coconut

METHOD

1. Mix all vanilla layer ingredients together in a bowl until well combined.

2. Dice strawberries & raspberries. In a bowl add maple syrup and orange juice. Place in the microwave for 30 seconds-1 minute or until the fruit has softened so you can mash it and turn it into a compote.

3. Melt vegan chocolate

4. In a jar start layering the vanilla & jam layers.

5. Pour your melted chocolate on top with a sprinkle of desiccated coconut.

6. Place your jar in the fridge to set for 5 minutes to 24 hours
