Caramelised Banana & Custard

1 – 2 ripe bananas
1 tbsp maple syrup
2 tbsp raw sugar or coconut sugar
Sprinkle of cinnamon
Coconut oil
COYO Dairy Free Vanilla Custard


Start by slicing your banana, either long ways into fingers or horizontally into bite sized pieces. Prepare two flat plates with your coatings, one containing sugar and cinnamon, the other containing maple syrup.  Coat bananas in maple syrup first, before dipping in dry mixture to form a sweet crust.

Add coconut oil into a pan over medium heat. Once hot, carefully place your bananas into the pan, wait for the sugar to become caramalised and golden before flipping. Once the bananas are completely golden and have a nice crunch on the outside, remove from heat and set aside.
