INGREDIENTS
500g COYO Vanilla Bean Coconut Yoghurt
Toasted desiccated coconut
2 passionfruit, pulped
2 bananas, chopped
1 tbsp fresh turmeric, chopped
1 tbsp of fresh ginger, chopped
1 tbsp of local honey
4 slices of dried orange
1 lemon, freshly juiced
1 tsp turmeric powder for colour
METHOD
- Blend together 250g COYO, honey, lemon juice, ginger, turmeric and bananas until well combined and smooth.
- On a sheet pan place down baking paper and then pour the blended mixture on top, smooth out with a spoon.
- Next, add dollops of remaining COYO over the yellow mix.
- Take a tooth pick and start to tease out, making a swirled pattern.
- Layer the top with passionfruit, desiccated coconut and dried orange pieces.
- Place in the freezer for 4-6 hours, then remove and slice up ready to enjoy.
- When finished, store in an air tight container in the freezer.
