Vanilla Ice Cream Brioche Buns

There is nothing more beautiful than taking a creamy, fluffy bite out of a dairy free brioche bun, filled to the brim with Vanilla Bean Coconut Ice Cream. This is truly the ideal snack, to be savoured while you sip your morning coffee and plot how you can eat another without being noticed!

INGREDIENTS

8 Good quality brioche buns
2 x 500mL tubs of COYO Vanilla Bean Ice Cream
Icing sugar to dust

METHOD

1. Slice the brioche bun from the top and lightly toast.
2 Fill each brioche bun with 2 scoops of slightly melted COYO Vanilla Bean Ice Cream. Dust the top of the buns with icing sugar. Serve immediately or transfer the ice cream buns to a sheet pan and pop them in the freezer until you’re ready to serve.
