Digestive Coconut Yoghurt Overnight Oats

1 cup rolled oats (gluten free if preferred)
1 cup COYO Vanilla Bean Coconut Yoghurt
1 tbsp chia seeds
1 tbsp ground flax seeds
1 tsp honey or maple syrup
1 cup unsweetened almond milk
1 tsp vanilla extract
Optional toppings; banana, raspberries, strawberries and nuts


In a mixing bowl, combine rolled oats, chia seeds and flax seeds. Mix well to ensure even distribution of the ingredients. Add COYO, vanilla extract and plant milk to the dry micture. Stir the honey or maple syrup (if using) for a touch of sweetness. Feel free to adjust the amount of liquid based on your preference. Mix everything together until it forms a creamy and well-combined mixture.

Cover the bowl with a lid qand place it in the refrigerator overnight or for at least 4-6 hours to allow the oats to soak and soften. In the morning, give the overnight oats a good stir before serving.

To serve, top with COYO, fruit and nuts. We used sliced banana, strawberries, raspberries, chia seeds, almonds and drizzled a bit more honey or maple syrup on top for added sweetness.
