Almond Butter & Banana Breakfast Crepes

These protein-packed Almond Butter & Banana Breakfast Crêpes are a wholesome, dairy-free recipe made with COYO coconut yoghurt, almond butter, and fresh fruit. Perfect for a healthy start to your day!

Ingredients

2 ready-made crepes ( you can find these in the frozen section of the supermarket, we use Nanna’s)

1/2 cup COYO Greek-Style Yoghurt

2 tbsp almond butter

1 ripe banana, sliced

1/2 cup fresh blueberries

1–2 tsp honey (for drizzling)

2 tbsp crushed pistachios

METHOD

Lay each crepe flat on a plate. Spread a generous layer of the yoghurt, top with almond butter and sliced banana and then fold into half and then half again. 

Top with a dollop of yoghurt, blueberries and pistachios and drizzle with honey. 

Serve and enjoy!
