Sticky Vanilla & Coconut Rice Pudding with Passionfruit

This healthy rice pudding recipe makes a delicious-as brekkie!

INGREDIENTS

Rice pudding ingredients
350g short grain rice
4 tbsp COYO® Vanilla Bean Coconut Yoghurt
700ml water
Pinch of salt
1/2 tsp vanilla paste

To serve 
4 tbsp honey
Toasted coconut flakes
4 passion fruit

 

METHOD

1. Place rice, a pinch of salt, water and vanilla paste in a pan over medium heat
2. Simmer for approx. 25mins until the rice becomes thick and sticky, stir occasionally to avoid sticking to the bottom of the pan
3. Once cooked, remove the pan from the heat & allow to cool slightly
4. Stir through the COYO Vanilla Bean Coconut Yoghurt until the rice becomes creamy
5. Place the mixture in the fridge to cool further
6. To serve, drizzle honey around the wall of serving glasses
7. Remove rice pudding from the fridge and divide between serving glasses
8. Slice passion fruits in half, and spoon pulp on top of the pudding
9. Garnish with toasted coconut flakes, serve and enjoy!
