This Vanilla pancake recipe is a particular favourite of ours. Amanda has created this whole foods recipe to work perfectly with your Vanilla Bean COYO Coconut Milk Yoghurt, for an entirely plant-based pancake perfection stack!
INGREDIENTS
1/2 cup buckwheat flour
1/2 cup almond meal
1 tbsp flax meal
1/2 cup Vanilla Bean COYO
1 1/2 cups almond mylk
3 tbsp maple syrup (+ more to serve)
6 fresh strawberries
2 tbsp Strawberry COYO to serve
METHOD
1. In a medium-sized bowl, combine buckwheat flour, almond meal and flax meal. Mix together well.
2. Add Vanilla Bean COYO, almond mylk and maple syrup to dry mix and combine well.
3. Grease a frying pan with vegan margarine or oil, cook pancakes until golden.
4. Serve stacked with fresh strawberries, Strawberry COYO and a drizzle of maple syrup.
