Blue Galaxy Chia Pudding

Mornings can be hectic, but starting the day with a nutritious, delicious, and fun breakfast like this Blue Swirl Chia Pudding can make all the difference! Packed with fibre, protein, and omega-3s, chia seeds provide long-lasting energy and focus to fuel busy days.

Ingredients

1/2 cup chia seeds

1 1/2 cups plant milk (almond, oat, or coconut milk)

3/4 cup COYO Natural Coconut Yoghurt

1–2 tsp maple syrup or honey (optional, for sweetness)

1/2 tsp blue spirulina powder

Fresh fruit (like blueberries or banana slices, for topping)

METHOD

Prepare the Chia Pudding Base Ahead: 

In a bowl or jar, mix the chia seeds, plant milk, blue spirulina and ½ cup of COYO Natural Coconut Yoghurt. Stir well to combine. Sweeten with maple syrup or honey, if desired. Let the mixture sit for 5 minutes, then stir again to prevent clumping. Cover and refrigerate for at least 3 hours or until the pudding thickens.

Create the Swirls: 

Use the back of a spoon or a small spatula to add dollops of the yoghurt along the inside of your serving glass or jar if you want make these as a lunch box option. Next add a pinch of blue spirulina on top of each yoghurt dollop and the use the back of the spoon to smudge the two together in a swiping motion, this will create the galaxy swirl.

Top and Serve: 

Once the chia pudding has set, spoon it out into the serving glass or jar. Finish with a sprinkle of granola and fresh fruit like blueberries or banana slices for a pop of flavour and texture.
