Dreamy Blue Coconut Cloud Smoothie

Something about bright food just makes us drool. There’s no nasties in this dreamy smoothie, just natural spirulina powder to create that beautiful blue colour you want to swim in. Sip your daily collagen boost away and get lost in the world of creamy whipped opulence.

INGREDIENTS

1 cup almond milk
1 cup ice cubes
1 tsp almond butter
1 cup frozen banana
1 ½ cup frozen pineapple
¼ avocado
3 tbsp of collagen peptides 
2 tsp Unicorn Superfoods blue spirulina
1/2 cup of COYO Vanilla Bean Coconut Yoghurt
1 cup of COYO Vanilla Bean Coconut Yoghurt, whipped
1 tbsp maple syrup
Dragon fruit 

METHOD

  1. Add 1 cup of COYO Vanilla Bean Coconut Yoghurt to a pre chilled mixing bowl. Beat on medium for approx. 5 minutes until Yoghurt becomes fluffy and you can make peaks with the back of a spoon. Cover and store in an airtight container in the fridge.
  2. Next add 1 tsp of blue spirulina plus all other remaining ingredients to your blender, blending till well combined.
  3. To assemble, scoop 2 tbsp of whipped COYO to your glass, dust around the glass edges with blue spirulina powder then top with smoothie mixture. Take a spoon and smear the whip against the glass. Dollop two more spoonfuls of COYO whip on top, dust again with spirulina and garnish with dragon fruit wedge!
