Ingredients
1 cup freeze-dried strawberries
1/2 cup almond meal
1/4 cup COYO Strawberry Coconut Yoghurt
4 tbsp desiccated coconut (for rolling)
1 tbsp chia seeds
2 tbsp honey (or maple syrup for a vegan option)
1 tsp vanilla essence
METHOD
Process the freeze-dried strawberries into a fine powder using a food processor or blender.
Combine the almond meal, strawberry powder, and chia seeds in a bowl.
Mix in the COYO Strawberry Coconut Yoghurt and honey (or maple syrup) until the mixture comes together.
Roll into balls and optionally coat with desiccated coconut and a light dusting of strawberry powder.
Store in the fridge until firm, then enjoy!
