Immune Boosting Yoghurt Bark

This dairy free yoghurt bark is a delightful masterpiece that you can whip up in no time with the kids. Brace yourself for an explosion of zesty ginger, fresh turmeric and passionfruit, all crafted to fortify your body’s natural defences.

INGREDIENTS

500g COYO Vanilla Bean Coconut Yoghurt
Toasted desiccated coconut
2 passionfruit, pulped
2 bananas, chopped
1 tbsp fresh turmeric, chopped
1 tbsp of fresh ginger, chopped
1 tbsp of local honey
4 slices of dried orange
1 lemon, freshly juiced
1 tsp turmeric powder for colour

METHOD

  1. Blend together 250g COYO, honey, lemon juice, ginger, turmeric and bananas until well combined and smooth.
  2. On a sheet pan place down baking paper and then pour the blended mixture on top, smooth out with a spoon.
  3. Next, add dollops of remaining COYO over the yellow mix.
  4. Take a tooth pick and start to tease out, making a swirled pattern.
  5. Layer the top with passionfruit, desiccated coconut and dried orange pieces.
  6. Place in the freezer for 4-6 hours, then remove and slice up ready to enjoy.
  7. When finished, store in an air tight container in the freezer.
