MANGO LASSI POPS

This delectably delicious recipe was created by the wholesome Sasha Swerdloff. Enjoy these frozen treats made with luscious coconut milk yogurt, fresh, ripe mango, a bit of lime, vanilla, a pinch of cardamom and some mint and turmeric for good measure.

INGREDIENTS

2 ripe mangoes

1/2 cup COYO

1 tablespoon coconut sugar

1 teaspoon lime juice

Leaves from 1 sprig of mint

Seeds from 1 vanilla bean

1/2 teaspoon ground turmeric

Pinch of salt

Pinch of ground cardamom

1/4 cup plus 2 tablespoons water

DIRECTIONS

1. Peel and cube the mangoes and add to a high speed blender with COYO, coconut sugar, lime juice, mint leaves, vanilla, turmeric, salt, cardamom and water.

2. Blend on medium high until completely smooth.

3. Divide the mixture evenly between your popsicle molds and freeze.
