WHOLESOME GRANOLA BOWL W/ COYO AND FRESH FIGS

What could be better than waking up to homemade granola, fresh figs and COYO coconut yoghurt? We can't think of anything either! This stunning recipe makes breakfast easy and oh, so delicious, in 3 simple steps - Granola, almond milk and COYO! If figs aren't in season, replace them with mixed berries.

INGREDIENTS

Granola

1/3 cup (65g) coconut oil melted

1 tablespoons vanilla bean paste

1 orange, rind finely grated

1 cup pepitas

1/2 cup sunflower seeds

2 cup roughly chopped nuts

12 fresh dates, pitted roughly chopped

1/2 cup currants or sultanas

1/3 chai seeds

2 cups coconut flakes

Toppings

Fresh figs

Natural COYO

DIRECTIONS

1 Preheat oven to 160. Line two large baking trays with baking paper.

2 Place coconut oil, vanilla and oranges rind in a bowl and stir to combine.

3 Add all other ingredients apart from the coconut flakes.

4 Spread over baking trays and cook for 15 minutes.

5 Add coconut flakes and cook for a further 5 minutes or until golden.

6 Set aside to cool and keep in an airtight container for up to two weeks.

7 Serve with Coyo, maple syrup and fresh figs or any fruit you desire.
